It is a local trade term rather than a technical one, and that is exactly why it causes confusion. Here is what it means in practice when you order a tanker in Dubai.

Sweet water, defined

Sweet water is fresh, non-saline water suitable for general household use — villa storage tanks, swimming pools, washing and, from an approved source, drinking.

“Sweet” here means “not salty”. It is not a flavour or a grade.

Where the term comes from

The phrase distinguishes fresh water from salt water, which is also transported by tanker in the UAE for industrial and construction uses. In a region where desalination supplies most fresh water, the salt-versus-fresh distinction is the one that matters commercially, so the trade language reflects it.
